Drinks and other Goodies!

A lot of my friends who have come to my various parties at my house have asked for the recipes for drinks and other goodies I have had. So here is a list of a few "Onjian Signature Recipes"!

Drinks

"Emerald City"

If you drink enough of these you will think you are back in Oz with the Tin Man. Nice pretty greenish blue color... Thanks to Chuck and Brad for the name.

2oz Pineapple Juice
1oz Blue Curacao
1oz Midori
1oz Malabo
Splash of Lime Juice

Combine all ingredients in a shaker and shake with ice. Pour over ice in a tall glass.

"The Green Drink"

This is a variation of the "Patty'O Punch" found at Bennagen's. It first appeared at the St. Patrick's Day party in 2003.

2oz Midori
1oz Malibu
1oz
Holland House Sweet n' Sour
1oz
Holland House Whiskey Sour
1oz Pineapple Juice
Splash of Lime Juice

Combine all ingredients in a shaker and shake with ice. Pour over ice in a tall glass. 

"The Drunken Bridesmaid"

This drink is derived from a drink that we found at Jen & Terry's Wedding. As the name suggest, many portions were consumed by the bridesmaids.. An excellent "group-shot" drink that is very strong but does not taste it. The colder it is, the better!

1oz Vodka
1oz Clear Tequila
1oz Southern Comfort
1oz Disaronno Amaretto
1oz Malibu
1oz Orange Juice
1oz Pineapple Juice
Splash of Grenadine

Combine all ingredients in a shaker and shake with ice. Pour in equal amounts into several tall shot glasses. Makes about 6 portions.

"Iguana"

Derived from a drink found in Aruba. Like the Green Drink but with less sour bite and more coconut tropical flavor.

2oz Midori
1oz Malibu
1 1/2oz Holland House Sweet n' Sour
1/2oz Holland House Whiskey Sour
1oz Holland House Pina Colada
1 1/2oz Pineapple Juice

Combine all ingredients in a shaker and shake with ice. Pour over ice in a tall glass.

"Chris's Amaretto Sour"

A favorite of Patti and Jen

1 1/2oz Disaronno Amaretto
2oz Holland House Whiskey Sour
1oz Triple Sec
1oz Orange Juice

Combine all ingredients in a shaker and shake with ice. Pour over ice in a tall glass.

"Chris's Amaretto Sour (Version 2)"

1 1/2oz Disaronno Amaretto
3oz Holland House Whiskey Sour
1oz Holland House Sweet & Sour
1/2oz Orange Juice

Same as above with different ingredients. 

Food

Vodka Sauce

1 can Hunt's Crushed Tomatoes
1/2 cup Heavy Cream
1/2 cup Vodka
1/4 tsp black pepper
1/4 tsp salt
1/4 cup finely chopped white onion
2tbs olive oil
Additional seasonings to taste (oregano, basil, etc)

In a large skillet add the oil and heat it. When hot add the white onion. Sauté the onion until tender but do not let the onion burn. Add the rest of the ingredients and heat under medium flame until bubbling. Cook the mixture down stirring frequently. Sauce should be thicker after about 20-25 minutes. Serve immediately over pasta. Does not keep well so eat it all while hot! 

The TGIF Jack Daniel's Glaze

This is a "copy" of the glazed used at TGIF. You can use it as a dipping sauce, or glaze just about anything while grilling or baking it. This makes about 1 cup but you may get more depending on how much you cook it down. This recipe does take a while to make but you can do it ahead of time.

1 Head of Garlic
1 tbsp olive oil
2/3 cup water
1 cup pineapple juice
1/4 cup teriyaki sauce
1 tbsp soy sauce
1 1/3 cup dark brown sugar
3 tbsp lemon juice
3 tbsp minced white onion
1 tbsp Jack Daniels Whiskey
1 tbsp crushed pineapple
1/4 tsp cayenne pepper

  1. Cut about 1/2 inch off top of garlic. Cut the roots so that the garlic will sit flat. Remove the papery skin from the garlic, but leave enough so that the cloves stay together. Put garlic into a small casserole dish or baking pan. Drizzle olive oil over it, and cover with a lid or foil. Bake in a preheated 325° oven for 1 hour. Remove garlic and let it cool until you can handle it.
  2. Combine water, pineapple juice, teriyaki sauce, soy sauce, and brown sugar in a medium saucepan over medium/high heat. Stir occasionally until mixture boils and then reduce heat until mixture is just simmering.
  3. Squeeze the sides of the head of garlic until the pasty roasted garlic is squeezed out. Measure 2 tsp into the saucepan and whisk to combine. Add remaining ingredients to the pan and stir
  4. Let mixture simmer for 40-50 minutes or until sauce has reduced by about 1/2 and is thick and syrupy. Make sure it doesn't boil over.

Sweet Marinated Meat Skewers

As much beef or chicken as you want
Holland Peppers
Large White onion
Pineapple Juice
Mike's Teriyaki Sauce
Jack Daniels Whiskey

Cut the meat up into small cubes and place them into a large bowl. Make sure you keep the various types of meat separated. Add a liberal amount of Pineapple Juice, the Teriyaki sauce, and the Whiskey. Mix up with the meat well. Cover and let it sit in the fridge over night.

When you are ready to use the meat drain it and add to skewers along with chopped up pieces of Green and Red Pepper, and Onions. Grill meat on medium heat but do not over due it. Do not smother with any glaze or sauce while cooking as it will mask the flavor of the marinated meat. This is good served with the Jack Daniel's Glaze on the side.

Bacon Wrapped Water Chestnuts

2 Packages of Oscar Meyer Ready to Serve Bacon (15 pieces each)
2 cans of whole water chestnuts
Heinz Chili Sauce
Miracle Whip Light Dressing
Brown Sugar

Wrap the water chestnuts with pieces of bacon and secure with a single toothpick. Lay them in a flat baking tray. In a small bowl mix up the Chili Sauce, Miracle Whip, and Brown sugar. When ready to cook pour the sauce liberally over the water chestnuts (make sure all of them are covered). Bake at 350° for at least 30 minutes or until the sauce is bubbling.
